Spicy Chipotle Grain Bowls

The Spicy Chipotle Grain Bowl is stuffed with fluffy brown rice, black beans, cheese, cool sour cream, avocado, zesty pico de gallo, olives, and homemade spicy chipotle sauce that really packs a punch. It's a hearty meal that is guaranteed to satisfy any taco craving.

Ingredients
  

Spicy Chipotle Sauce

  • 3 1/2 oz chipotle peppers in adobo sauce (half of a 7 oz can)
  • 1/4 cup sour cream
  • 1/4 cup Kewpie mayonnaise If you don't have Kewpie, any mayonnaise works too.
  • 1 Tbsp lime juice half a lime
  • 1/4 cup cilantro leaves
  • 3 garlic cloves
  • 1/2 tsp brown sugar
  • 1/2 tsp chili
  • 1/2 tsp cumin
  • 1/2 tsp garlic
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder

Brown Rice

  • 1 cup long grain brown rice
  • 2 cups chicken broth
  • 1 Tbsp butter
  • 1/4 tsp salt
  • 1 garlic clove

Black Beans (optional but Tasty!)

  • 1 can black beans
  • 1/4 tsp garlic
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp cumin
  • 1/8 tsp chili powder
  • 1 Tbsp lime juice
  • 1 cup chicken broth

Chipotle Grain Bowls

  • black beans
  • cooked brown rice
  • spicy chipotle sauce for serving
  • pico de gallo salsa for serving
  • queso fresco cheese mozzarella cheese is good too!
  • sour cream for serving
  • 1 avocado
  • 1/4 cup sliced black olives
  • cilantro for serving
  • (optional) steak strips or chicken strips

Instructions
 

Spicy Chipotle Sauce

  • Pour all the ingredients into a food processor or blender. Blitz til smooth. You may need to scrape down the sides a few times with a spatula. Spoon into a bowl and save til ready to use. It lasts about 4 days in the fridge.

Brown Rice

  • In a small saucepan, rinse the brown rice and drain.
  • Add the chicken broth, butter, salt, and garlic clove to the rice. Bring to a boil. Cover, and reduce the temperature to medium low. Simmer for 50 minutes until the rice is fluffy and tender and the broth is fully absorbed.

Black Beans (optional but TASTY!)

  • Wash and drain the canned black beans. In a small saucepan, mix the beans chicken broth, and spices together. Heat over medium low and simmer for 15 minutes.

Chipotle Grain Bowl Assembly

  • In a bowl, spoon in the warm black beans. Add a layer of hot brown rice and spoon on the spicy chipotle sauce to taste. Add pico de gallo salsa and cheese. Top with sour cream, sliced black olives, avocado, and protein of your choice. garnish with cilantro. Enjoy!
