Roasted Peaches with Miso Cinnamon Sugar Glaze

Roasting the peaches gives them such a decadent and pure peach flavor. Miso maple cinnamon butter adds a slight salty, cozy vibe which gives this glaze a warm, nutty, taste. Imagine the best peachy caramel sauce oozing in dark golden pools around sweet, cold vanilla ice cream.

  • Preheat oven to 400℉. Set oven rack to the middle of the oven. In a cast iron skillet or oven safe frying pan, add butter, miso paste, maple syrup, cinnamon, ginger, and vanilla. Heat over medium low heat to melt. Stir the miso paste into the butter to thoroughly combine.
  • Cut peaches in half and remove the pits. Spoon the miso maple glaze over the peaches. Sprinkle the brown sugar on top. Transfer the skillet to the oven and bake for 10 minutes. Remove the skillet from the oven, raise the oven rack up so you can quickly broil the tops of your peaches. Put the peaches back into the oven to broil for 4-5 minutes. (Please note: If you don't care about having your peaches with a broiled top, just let them bake for 15 minutes.)
  • To serve, arrange your roasted peaches in a bowl with ice cream. Drizzle the miso maple glaze on top of the ice cream and enjoy!
