With back to school upon us and fall creeping around the corner, Washington is still clinging on to the last days of summer. Despite all the sadness I feel with summer coming to a close, there is still one delicious summertime treat worth waiting for. Peaches are here! Lusciously vibrant, golden and rosy peaches are bright, mouth watering, ultra juicy, sweet, and delicious. Peaches are the ultimate fruit for dessert. It’s fun to make cobblers, pies, and cakes, but roasting your peaches is such a special, simple dessert that can be perfect for a date night or for hosting one last summer party! Miso maple cinnamon butter adds a slight salty, cozy vibe which gives this glaze a warm, nutty, taste. Imagine the best peachy caramel sauce oozing in dark golden pools around sweet, cold vanilla ice cream. Roasting the peaches gives them such a decadent and pure peach flavor. Back To School Busy

The first day of school means hectic days are back and there isn’t any time for fun, fussy desserts! I need something fast, simple, and can satisfy every pie craving imaginable. Cue Roasted peaches! This dessert is best with fresh peaches that are either at the peak of freshness or are nearing the overripe stage. Unripe peaches will not have the same epic flavor.

A One Dish Dessert Wonder

I may have stated it before…but I HATE dishes! I do not like washing them. I don’t like putting them away. The problem is I am always attracted to fussy desserts. Maybe it’s because I still don’t have kids? Haha!

I adore making pies, tarts, and other fiddly sweets. During the beginning of the school year, I don’t have time at night to make fancy things. Thankfully, this roasted dessert is all done in a cast iron skillet! If you don’t have a cast iron skillet, no worries! Use any kind of oven safe skillet. Or, if you don’t have either, use a Pyrex dish for roasting your peaches. It’s easy, quick, and tastes just like a peach pie without any of the added work that pie crusts makes.

There’s One Last Summer Tradition You Need To Do!

GO U-PICKING! U-pick farms are everywhere in Washington. From where I live, it’s only a short jaunt to the Hood River fruit loop in Oregon. There you will find a treasure trove of fresh berries, fruits, and vegetables. I grew up going u-picking. We would pick fresh blueberries, strawberries, raspberries, and peaches by the bucketful. For a larger family, it was the best way to find delicious fruit on a budget. After a long expedition to find our sweet treasures, we would freeze them and savor the summer haul of fruit through winter. Nowadays U-picking has become more popular and is more expensive for small farms to maintain. Unfortunately, that means the prices have gone up (kinda like gas). It might seem more expensive to get them from a small farm, but if you have never had a sun-ripened peach freshly picked off the tree then you are TOTALLY missing out! And let’s be honest, sometimes you can still buy fruit in bulk and its way cheaper than buying it from a store! If you have never gone u-picking, try it! I can’t think of a better summer foodie adventure.

Summer Is Here , But Fall Is Whispering Hi!

Cinnamon ginger and peaches were meant to be together. Cinnamon and ginger are such warm and cozy spices that hint of all the flavors we love best in the fall.The caramel molasses tones you get from maple syrup and brown sugar add a great balance to the natural sweetness from the peaches. It’s the perfect bridge between summer and fall. Don’t get me wrong. I love pumpkin spice lattes, but August is too soon! If you need a slightly fall inspired summer treat, ditch the pumpkin and stick with peaches.

Miso?

Miso adds a beautiful hint of umami to the peaches. While you can easily make this with salt, miso complements the sweet and gives a delightful salty caramel flavor to the peaches. Don’t skip it if possible. I used white miso because it is lighter in flavor than red miso.

Pair It With Cream

Cream is and always will be peaches bestie. Ice cream, mascarpone, and whip cream are fool proof ways to make roasted peaches shine. I hope you enjoy the rest of summer and the beginning of the school year! Happy eating!

Roasted Peaches with Miso Cinnamon Sugar Glaze

Roasting the peaches gives them such a decadent and pure peach flavor. Miso maple cinnamon butter adds a slight salty, cozy vibe which gives this glaze a warm, nutty, taste. Imagine the best peachy caramel sauce oozing in dark golden pools around sweet, cold vanilla ice cream.
Course Dessert

Instructions
 

  • Preheat oven to 400℉. Set oven rack to the middle of the oven. In a cast iron skillet or oven safe frying pan, add butter, miso paste, maple syrup, cinnamon, ginger, and vanilla. Heat over medium low heat to melt. Stir the miso paste into the butter to thoroughly combine.
  • Cut peaches in half and remove the pits. Spoon the miso maple glaze over the peaches. Sprinkle the brown sugar on top. Transfer the skillet to the oven and bake for 10 minutes. Remove the skillet from the oven, raise the oven rack up so you can quickly broil the tops of your peaches. Put the peaches back into the oven to broil for 4-5 minutes. (Please note: If you don't care about having your peaches with a broiled top, just let them bake for 15 minutes.)
  • To serve, arrange your roasted peaches in a bowl with ice cream. Drizzle the miso maple glaze on top of the ice cream and enjoy!
