I love making homemade coffee and tea lattes at home! Personally, I enjoy my cream and sugar with a little coffee. I know that may be sacrilegious to some, but it’s like french fries and ketchup! Sometimes the french fries are just there as vessels for ketchup! π Unfortunately, syrup is more expensive than I want to pay. Cue the search for a homemade recipe! Let me introduce you to the best salted caramel coffee syrup!
So what’s the catch?
By now, you probably know that I enjoy adding soy sauce or miso paste to my recipes (especially the sweet ones!). My husband likes to tease me by saying “how does miso wind up in everything?” Well it does! If your recipe needs salt, consider adding some umami to your sweet recipes! My favorite recipe for salted caramel skips the salt and opts for miso paste instead. NO! IT DOES NOT TASTE LIKE MISO SOUP! π
Delicate and slightly salty, white miso paste brings a lovely umami flavor that balances out the sweetness of homemade caramel. By adding a little bit of miso to my coffee caramel, it brings a little bit of the salty, umami flavor I love to my coffees! Of course, it’s optional, but I would say add it and see what you think before you knock it. Alternatively, you can add two teaspoons of soy sauce instead of miso paste! They both taste fantastic!
Miso Caramel Coffee Syrup: Step By Step
Step One: Make the caramel!
In a small saucepan, add sugar and 1 cup of water. Bring to a gentle boil over medium heat to dissolve the sugar. Don’t put your burner on high! This will make your syrup have a burnt taste. Once the sugar is dissolved, continue to boil for another 18-20 minutes. This depends on your burner, so make sure you keep checking it! You are waiting for a beautiful golden/amber color to appear.
Helpful tip: If possible, use a saucepan that is not dark. If your pan is dark, it will be harder to see if your syrup is turning golden.
Step Two: Add the Flavorings!
Dissolve the miso paste into the remaining cup of water. Use oven mitts for this step since it will spatter a little! Carefully pour the miso mixture through a strainer into the syrup while gently whisking. If any of the syrup hardens, whisk and return to heat until fully dissolved. Remove from heat. Add vanilla and allow to cool thoroughly before storing in an airtight container.
Let’s Make some Lattes!
One pump of syrup is roughly one tablespoon. Enjoy your miso caramel syrup with your coffee or tea lattes!

Miso Caramel Coffee Syrup
Ingredients
- 1Β½ cup granulated sugar
- 2 cups water, divided
- 1Β½ tsp white miso paste alternatively you can add 2 teaspoons of soy sauce
- 1Β½ tsp vanilla
Instructions
- Combine sugar and one cup of water in a small saucepan. Heat over medium high heat to a gentle boil. Once the sugar is dissolved, continue to boil for 18-20 minutes until your caramel reaches a light golden/amber color. This depends on your burner so stay nearby to make sure it doesn't burn!
- Dissolve the miso paste with remaining 1 cup of water. Use oven mitts to protect your hands for this next bit as it will splatter. Pour the miso mixture through a strainer into the caramel syrup. If any syrup hardens, whisk and return to heat until it dissolves. Add the vanilla and allow to cool before storing in an airtight container.
- Store in the refrigerator for about 2-3 weeks. To use in coffee, one tablespoon is roughly equal to one traditional pump of syrup. Enjoy!
